Terroir: Plots facing south, granular soils on Leptynite and Schist

Area: 4 ha

Vine work: Short Nantais Guyot pruning, control of yields (45L/ha maximum). Inter-row scratching, inter-vine plowing, partial grassing, green work (disbudding, trellising, trimming, etc.)

Harvest: Mechanical with on-board sorter-ginner

Vinification: Pneumatic pressing, light settling for 12 hours cold, indigenous alcoholic fermentation thermoregulated between 16 to 18°C

Aging: On its lees for 18 months in underground glass-glazed concrete vats in Nantes style, stirring

Tasting: Ideal serving temperature between 10° and 12°C

Potential: 5 years and over

Comments on the Vintage: Creamy pearly reflections, subtly mineral on the nose, all roundness, empyreumatic

Food and Wine Pairings: Ideal companion for fish in sauce, sublime with a casserole of scallops and crayfish
