Grape variety: Gamay, Cabernet Franc, Merlot

Working the vines: Short Nantais Guyot pruning. Inter-row scratching, inter-vine plowing, partial grassing, green work (disbudding, trellising, trimming, etc.)

Harvest: Mechanical with on-board sorter-ginner

Vinification: Maceration of destemmed grapes in stainless steel vats for 10 days, alcoholic fermentation on marc, pneumatic pressing then flow of juice into underground vats by gravity, malolactic fermentation

Aging: In underground glass-glazed concrete vats à la Nantes

Tasting: Ideal serving temperature around 15°C

Potential: 1 to 5 years

Comments on the Vintage: Ruby red color, nose of red fruits, harmonious, slightly tannic mouth

Food and Wine Pairings: Accompanies marinated and grilled red meats or simmered rabbit
