Terroir: Shallow soils on a support of altered rocks of Gneiss and Schists

Area: 8 ha

Vine work: Short Nantais Guyot pruning, control of yields (55hL/ha maximum). Inter-row scratching, inter-vine plowing, partial grassing, green work (disbudding, trellising, trimming, etc.)

Harvest: Mechanical with on-board sorter-destemmer, only healthy harvests

Vinification: Pneumatic pressing, cold settling for 24 to 36 hours, thermoregulated alcoholic fermentation between 16 to 18°C

Aging: On its lees for 6 months in underground glass-glazed concrete vats in Nantes style, stirring

Tasting: Ideal serving temperature between 9° and 11°C

Potential: To drink when young

Comments on the Vintage: Light sparkling, fine nose of white fruits, balanced palate, lemony notes

Food and Wine Pairings: Pleasantly accompanies oysters, seafood platters and fish
