Grape variety: Burgundy Melon

Terroir: Slope facing south, shallow soil on Serpentinistes and Amphibolites

Area: 1 ha

Vine work: Short Nantais Guyot pruning, control of yields (45L/ha maximum). Inter-row scratching, inter-vine plowing, partial grassing, green work (disbudding, trellising, trimming, etc.)

Harvest: Manual with sorting at the plot then in the cellar

Vinification: Pneumatic pressing, light settling for 12 hours cold, alcoholic fermentation with native yeasts

Aging: Long on lees 24 to 30 months in underground glass concrete vats and in double French oak barrels

Tasting: Ideal serving temperature between 10° and 12°C

Potential: 10 years and over

Comments on the Vintage: Flint nose, balanced and mineral wine with beautiful tension, representative of its terroir

Food and Wine Pairings: Remarkable with a noble fish accompanied by a white butter
